Broccoli Rice And Cheese Casserole



INGREDIENTS

FOR THE RICE:

  • 1 cup water
  • 1/2 tsp salt
  • 1 cup Minute Rice (Brown)

FOR THE VEGGIES:

  • 1/4 cup butter
  • 1/4 cup onion, diced
  • 1/4 cup celery, diced
  • 6 cups broccoli , roughly chopped

FOR THE CASSEROLE:

  • 1 10-3/4 oz condensed cream of mushroom soup, undiluted
  • 1 10-3/4 oz condensed cream of celery soup, undiluted
  • 1/3 cup light cream (or half and half)
  • 1-1/4 cup Velveeta cheese, diced

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Make rice in microwave according to package instructions using 1 cup water and salt.
  3. Steam broccoli in microwave steamer basket for 5 minutes, or until just fork tender. Place broccoli in mixing bowl and set aside.
  4. Place butter, onion, and celery in covered, microwave safe bowl, and cook for 3-4 minutes, until onions and celery are softened and butter is melted.
  5. Add to the broccoli in the mixing bowl: rice, cooked onion and celery mixture. Toss to combine.
  6. Add both cans of soup to mixture along with light cream and diced Velveeta cheese.
  7. Bake casserole for 60 minutes. Remove from oven and let cool about 10 minutes prior to serving.
